We can keep it simple, because it really is! There are 2 methods to smoking duck eggs.
Method 1: Smoking Raw Eggs
Prep: Preheat your smoker to 225°F using a mild wood like apple, pecan, or cherry.
Smoke: Place the whole, raw eggs directly on the grill grate and smoke for 2 hours.
Chill: Immediately transfer the eggs to an ice water bath for 10-15 minutes to stop the cooking process. This also helps separate the inner membrane from the shell, making them easier to peel.
Method 2: The Boil & Smoke Method
*Recommended for easier peeling*
Boil: Place the eggs in a pot of cold water and bring to a boil. Remove from heat and let them sit in the hot water for 14 minutes.
Shock: Plunge into an ice bath until fully cooled, then carefully peel them.
Smoke: Place the peeled, hard-boiled eggs onto your smoker racks at 165°F to 225°F for 30 minutes to 1 hour.
